Flavour is at the heart of everything I do. Many of my clients describe my cakes as “the best cake I’ve ever had in my life” — and this is exactly the standard I work towards every time. Each element is made entirely from scratch using premium, fresh ingredients: real fruit confit, silky curds, caramelised fruits, Belgian chocolate and carefully balanced creams. I never use shop-bought fillings or artificial shortcuts — every flavour is handcrafted with intention, precision and time.

My menu brings together both timeless favourites and modern signature combinations developed through years of refinement. KIWI & LEMON CURD

BANANA & STRAWBERRY
Vanilla chiffon sponge soaked in strawberry syrup, layered with fresh strawberry confit spheres and a slow-cooked caramelised banana cream. MANGO & COCONUT
